Day 27 of 30: Bakery Bar
I love cake…no wait, I love good cake! I love watching cake decorating shows and dreaming of some day making a cake half as beautiful, but then I wake up and realize I’m not a cake designer! Jocelyn at the Bakery Bar, she’s a cake designer. I had my first Bakery Bar experience on April 12th, 2008 at Jen and Hank’s Wedding at Silcox Hut. [See mountain themed cake below] I first fell in love with the unique and fun design of the cake and soon became a believer in their delicious cake! Join us as we talk to Jocelyn from the Bakery Bar…
Champagne: How did the Bakery Bar begin?
Jocelyn: My husband Dan and I started bakery bar at the end of 2005, it started as a coffee shop and we featured our breakfast pastries, tarts and custom cakes…later we added lunch. The second shop opened at the end of 2008, and has a much bigger kitchen, allowing us to expand our cake business and add a full breakfast to the menu.

Champagne: What sets you apart from other bakeries?
Jocelyn: We make as much as we can from scratch and in small batches…scones, biscuits, english muffins, our syrups for coffee drinks, granola, marshmallows, condiments and spreads, our cakes…we serve a full breakfast and will be serving breakfast cocktails very soon, we have a thriving custom/celebration/wedding cake business.

Champagne: Besides cakes, what are your specialties?
Jocelyn: Aside from the cakes, our specialties are scones, the apple-bacon scone with maple glaze in particular gets a lot of attention, and our awesome breakfast menu, which the amazing of McRae Freeman makes…he makes our pastrami, we make our own biscuits, english muffins, brioche and rye bread, which are all featured in our breakfast.

Champagne: What cake flavors do you offer?
Jocelyn: Chocolate Devil’s Food, Vanilla Butter Cake, Sour cream Citrus Poppy, Coconut, Banana, Carrot Five-Spice, Lemon, Red Velvet
Champagne: What’s your favorite dessert?
Jocelyn: Not much of a dessert eater.

Champagne: What inspires you?
Jocelyn: Seasonal produce and herbs inspire flavors, graphic design and nature inspire cake decorations.
Champagne: What has been your most unique request for cake design?
Jocelyn: We made a stacked and tiered cake for Isaac Brock decorated with miniature horses.
